Can someone please explain the difference between a Positive Expo Setting (+) and a Negative Expo Setting (-) ?

A positive expo setting will decrease the sensitivity around the center of the stick, and increase it out towards the edges.
Negative expo will do just the opposite - your stick will be more sensitive in the middle, and less sensitive towards the edges.
I don't remember where, but there's a nice graphic on OTX radios that shows the input and corresponding output.
If you want your model to fly smoother and with more precision while still retaining full throw (say, for flaring on landing) you can add positive expo.
