I want to program a mixer for rudder that gives a little down elevator in each rudder direction. I can do it so that it gives down elevator in one rudder direction, but gives up elevator in the other direction. How do you give down in both rudder directions?

Depends a bit on the directions you use and what you mean by down elevator but...

Add a += line to the elevator mix..in the Mixer
Rud Weight +10 NoTrim Function (|x|)

Adjust the Weight to suit. The key here is the absolute function |x| which makes the rud movement all +ve and the -ve Weight which inverts it (if necessary). NoTrim and using the raw Rud stick removes any unwanted effects of the Rudder trim or rates you may have set up with the Rudder Input. Note that you can do this other ways...Inputs have a stick side selection or you could use a custom curve.
