I’m not sure I understand this. I tried to assign flaps to my Avanti FMS jet. I’m using the latest version of ethos. I did a free mix for flaps and when I attached the battery with no other changes, he flaps immediately dropped. I watched several videos on how to do flaps. Their curve which they use for flaps was completely different for mine. I did not see at any time where their flaps immediately went down when they attached a battery. I was finally able to get the flaps to work using a different curve. I’ve attached a photo of my curve. I’m not sure why my curve is different from the ones I saw on the video.

To add flaps to an existing setup go to the mix menu, ADD mix, then select flaps from the popup list, you then need to scroll down and select 1 or 2 channels and then assign them to an output. You will also be able to assign a switch to the flaps setup. This is an easier way conpaired to a free mix.
 
I have often suggested to people that are having mix issues to go into the "per channel" view where you can see everything that is affecting a particular channel. In the image below you can see that rudders are mixed into channel 4 along with the aileron.

The real issue is before I did anything to the flaps. I just powered up the jet, and the flaps immediately went down. There was no programming of the flaps at the time I powered the jet up.
 
The channel default should be 0. Did you look at the outputs? Were the flaps channel(s) at 0? I notice your curve is set to go from 0 to -100, flaps on all the planes I have setup use full throw, 100 to -100, or thereabouts, so if the signal went to 0 my flaps would be about halfway down. What is the range on yours?
 
It is not possible for us to see what you had done. But here are some basics:

Every plane can be different, so different curves and outputs etc are going to be needed based on how you have built and connected things. Heck I have seen 2 identical servos operate reverse of one another.

When you tunr on a new mix, it is going to move servos. Better plan on that, and they may well hit mechanical limits, you BETTER plan on that.

These days I strongly suggest you do not let servos hit mechanical limits. On a foamy like an FMS, probably not a huge concern, but with better servos you are putting the model at risk when letting a servo hit mechanical limits. In some cases things get ripped apart, but in others, the servo will get so hot that something is going to fail, and this can take as little as a few seconds.
